This is really an eye measurement recipe, add as much of your choice of additions. Eye-ball it to your taste preference.
2-3 lbs cooked and cooled potatoes, cut into bite size pieces.
1/2 cup sour cream
1-2 tbsp. mayo
4 strips bacon, cooked until crisp and crumbled into small pieces. Reserve 1 tbsp. for garnish. You can most certainly use bacon bits.
1/4 cup chives or green onions, cut into small rings, reserve 2-3 tsp for garnish
1/3 cup shredded cheddar cheese, reserve 1 tbs for garnish
Add all of your ingredients to a bowl and fold everything together until all the potatoes are coated good with the sour cream mayo mixture.
Garnish with your goodies. Enjoy!
Serve chilled or room temp.
Note~I usually use Yukon Gold ,but, any kind will work. Skin on or off.
