2 cups cold leftover mashed potatoes
1 egg, lightly beaten
2 Tbsp. flour
1/8 teaspoon garlic powder
diced onion
Hormel real bacon bits
shredded cheese
salt and pepper
1 tablespoon olive or vegetable oil
Combine everything in a bowl except the oil. Mixture should be about the same consistency as a thick breakfast pancake batter, maybe a little thicker.
In a small skillet, heat oil over medium heat. At this point, make a "tester" pancake. Spoon your batter into pan, evening the batter to form a nice round pancake.
Cook about 3-4 minutes per side or until bottom is golden brown. Adjust your batter if needed. Go ahead now, finish making the rest.
Serve with sour cream or whatever sauce you wish. I have seen apple sauce served with them too. Or, just enjoy these guys
plain. Mmmm Mmmm good!
Notes~ Other seasonings can be added to your taste. If your cakes are not holding together when you are patting them out, add a little flour*

ReplyDeleteBarbara, I can't wait for you too either! Such a neat recipe to "play around" with. You can add in just about anything you have on hand. I added some chopped broccoli and some cheese on the last batch. Delicious!
