1 package butter pecan cake mix
4 whole eggs
3/4 cup oil
1 cup milk
1 can coconut pecan frosting (like the frosting used on a german chocolate cake)
Heat oven to 350 .
Beat eggs. Add all remaining ingredients EXCEPT frosting. Mix well by hand. Fold in frosting.
Grease and flour a 12 cup bundt or angel food cake pan. Pour in batter. Place cake pan on a cookie sheet and place in the oven. Bake for 50-60 minutes or until a toothpick comes out clean.
If you want, only use 2/3 of the frosting in the mix. Microwave the remainder until soft and drizzle over the cake.
Note~ Do NOT use a mixer to make this cake. It incorporates too much air into the batter and the cake will overflow in the oven.
I chose to make a powdered sugar simple glaze for the cake this time.
