Honey Bbq Chicken Fillet
Boneless, skinless chicken breasts cut in half (horizontally)
2 ¾ cups flour
1 teaspoon Seasoning salt
1 cup butter milk
Vegetable oil for deep frying
Honey Barbeque Sauce
Combine the salt, pepper and seasoning in a bowl and set aside.
Place the buttermilk in a separate bowl and set aside.
Heat the oil to 325 degrees for frying.
Roll the chicken fillet in flour, then in buttermilk and back into the flour.
Deep-fry in the oil until a light golden brown (about 5-7 minutes). Just do 3 or 4 at a time depending on the size of your fryer so they don’t stick together (you will be baking these, so its ok if they are not done). Drain on paper towels.
Dip the chicken strips one at a time into the sauce and place them on a baking sheet sprayed with non-stick spray.
Bake at 350 for a few minutes to "set" the bbq sauce (optional).
My favorite way to eat this is on a piece of bread doused with ranch dressing :)
